Jizen Oysters are raised in the Seto Inland Sea area of Hiroshima, which is known as the “home of oysters.” We use only the finest quality “san-nen mono” (3 year) oysters here at our restaurant.
These are large, meaty oysters full of nutritional value and raised in the Seto Inland Sea. They are characterized by a fine and delicate umami.
Our grilling techniques have been handed down for generations from the time of our founding. The oysters are turned over time and time again to ensure that they are cooked thoroughly. These large, meaty oysters are cooked and steamed inside their shells to trap in all of their umami flavors.
In general, the season for oysters is said to be the winter months when temperatures drop. However, because the oysters we serve here in our restaurant are raised in an area of the ocean with a stable water temperature, customers can enjoy fresh and delicious oysters here all year round.
